Cooked sous vide style for 24hrs to ensure succulence. Pan fry the pork belly to caramelise and serve with maybe some spiced corn puree and sweet potato wedges for a restaurant quality meal. Can also be cut down into cubes for a wonderful canape of pork belly, roasted apple and micro herbs.
