3 Ways with Premium Smoked Salmon

Classic Smoked Salmon Plate

Ingredients

  • 2 free-range eggs
  • City Larder Premium Smoked Salmon 100g
  • small handful chives, finely chopped
  • ½ shallot, peeled and finely diced
  • capers
  • 1 lemon cheek
  • multi-grain bread, buttered, and crusts removed

Method

  1. Gently lower your eggs into boiling water and cook for 8-9 minutes. Plunge the eggs into a bowl of iced water – this will ensure they don’t form that unpleasant grey ring around the yolk’s edge – and allow to cool.
  2. Once cooled, tap the egg all the way around on a flat surface then dip into water again to easily remove the shell. Separate the whites from the yolks. Push the whites through a metal sieve and place to one side then and do the same with the yolks.
  3. Arrange the slices of smoked salmon onto the plate and top with the finely textured egg, parsley, shallots and capers to taste. Place lemon to one side and buttered bread to another and you’re ready to serve.

    Potato Pancake with Smoked Salmon

    Ingredients

    • 3 potatoes medium sized - King Edward or Dutch Cream
    • 30g butter
    • 200g plain flour
    • 2 eggs
    • chives, finely chopped
    • ½ shallot, peeled and finely diced
    • salt and pepper to taste
    • crème fraiche or sour cream
    • City Larder Premium Smoked Salmon 100g

    Method

    1. To make the mashed potato, in a medium size pan cover potatoes with cold, well-salted water. Bring to a boil, then turn down the heat so the potatoes are just simmering. Depending on the size you’ve cut the potatoes, they’ll take 10-15 minutes to become tender. Once cooked, drain then return to the still-hot pan for a couple of minutes to drive off any excess water then mash (or use ricer/food mill) the potato until smooth. Season to taste with salt and pepper and allow to cool.
    2. Sieve the flour onto the cooled mash and incorporate well. Blend in the eggs, half the chives, shallot and a little salt then beat the batter until smooth.
    3. Heat a non-stick frying pan over a medium heat. Add butter and swirl to coat the base then pour in the thick batter. Cook for about 10 min until the underside is golden brown and the top has mostly set. Now comes the fun part, turning it over. Ensure the sides and base is free from sticking and carefully flip the pan over on to a dinner plate. Tip out the pancake, then slide it back into the pan and cook for another 5 minutes, or until golden and fully cooked through.
    4. Meanwhile stir the remaining chives into crème fraiche/sour cream.
    5. Carefully transfer onto a serving board then cut into wedges. Serve with slices of smoked salmon and a quenelle of crème fraiche/sour cream.

      Smoked Salmon Bagel

      Ingredients

      • bagel
      • cream cheese
      • City Larder Premium Smoked Salmon 100g
      • capers
      • chives, finely chopped
      • dill, finely chopped

      Method

      To toast or not to toast is the eternal question and ultimately that’s up to you but if you do we recommend letting the bagel cool before you top it with a generous schmear of cream cheese, draped slices of smoked salmon, a sprinkling of punchy capers, some chopped chives and dill. That’s it, you’re good to go.
